The Zaguán Bistro opened its doors in December 2021 and it has been a wonderful journey for this family and all those who make up the Zaguán Bistro work team.

Red Fire Cookery

Jesús Rodríguez is passionate about culinary culture, especially in our country, Mexico. He has always been recognized by friends and family as a great cook, but it was not until the end of 2018 that he decided to buy a truck that in the 90's functioned as a fire patrol and turned it into a food truck. His plan was to invest time in his favorite hobby “cooking” and participate in some family or community events, which is how we started the business Red Fire Cookery Food Truck in March 2019. There was one issue many of the places we could operate such as farmers markets had long waiting lists and that’s how we ended up in Flagstaff, the city were we became known, to such an extent that we were about to go live in that city because Jesús managed to open in the market four days a week. It was months learning, hard work, and discomfort but above all commitment, what at one time was thought of as a hobby, it gradually turned into a business with great potential. It is with integrity, care, quality and love in which Jesús cooks, it can be perceived at the moment of eating any of his dishes that he prepares, and this gradually led the local people of Flagstaff to begin seeking the Red Fire Cookery Food Truck.

2020 was a challenging year for everyone, particularly for us who started a business that depended totally on sales, like most businesses, Red Fire Cookery suspended activity but Jesús continued cooking from home and with the help of our friends and acquaintances we sold food from home for several months.

In this time of challenge, Jesús began to create his own flavor formulas for our favorite drink "Kombucha" and registered the PHX Kombucha Company, being one of the few companies of said drink owned locally and by Hispanics. In July 2021, Jesús was handing out samples of Kombucha in Downtown Phoenix and found out that the location at 16 W Adam St was vacant, letting himself be carried away by a stronger intuition than the security being offered by recent events worldwide, Jesús then requested to see the premises and a week after he was signing a contract to establish El Zaguán Bistro Restaurant.

A Zaguán is a vestibule, it is not considered a room but it is used to receive visitors to the house or as a garden space. For Jesús and his wife Yashira, the Zaguán represents not only their childhood memories in their country but also the desire that whoever comes to their restaurant have a refreshing, relaxed stay, where they can enjoy simple food with a great Mexican touch. Let them eat like we eat at home!
